Whitebait are tiny fish no larger than your smallest finger that can be eaten in their entirety which includes the head, fins and gut.

Some people may squirm at the thought of consuming something that is warts and all, but if you havenít tried whitebait, you really wonít know what youíve been missing out on.

Not only is whitebait delicious and eaten in every corner of the world, itís a low calorie, nutritious fish full of proteins, minerals and omega 3.

This recipe requires very little preparation as you simply toss the whitebait in seasoned flour and shallow fry.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 entree servings

Ingredients
500gm Whitebait
1 Cup Flour
1 Teaspoon Salt
1 Teaspoon Black Pepper
Olive Oil for frying

Whitebait can be eaten in their entirety, which includes the head, fins and gut.


Method
Combine salt, pepper and flour.

Coat the whitebait in the flour, salt and pepper.

Coat the whitebait in well-seasoned flour.


In a large skillet add a little olive oil and heat.

Add the flour-coated whitebait in batches.

Shallow fry the whitebait until they turn a golden colour then remove with a slotted spoon.

Drain the cooked whitebait on absorbent paper. Repeat until all the whitebait has been cooked.

Drain the fried whitebait on a paper towel.


Serve with lemon wedges and chilled white wine!

Serve Salt & Pepper Whitebait as a snack, finger food or as a main meal.
