A simple meal using the leftover chicken. Tonight I am using the salt-baked chicken (readily available from any Asian BBQ shop) and its accompanied green-shallot oil. You can easily substitute it with BBQ Chicken with Gravy.
Ingredients Salt-Baked Chicken 1/4 (Can substitute with BBQ Chicken)
Cooked Rice 2 cups
Eggs x 2
Frozen Pea 1 cup
Home-made XO Sauce (Any pre-packaged XO sauce is suitable) 2 T/s
Green Shallot Oil Sauce 2 T/s
Japanese Mixed Chili Pepper Powder (Shichimi Togarashi) for garnish
Cooking oil 2 T/s
Salt & Pepper
Light soy sauce 1 t/s
Add the cooling oil into the wok on high heat. Stir-in the XO sauce until fragrant. Add in the eggs.
Scramble the eggs and XO sauce until well-cooked.
Add in the Frozen Peas.
Add in the rice and mix well.
Add some salt & pepper to season and a dash of light soy sauce.
XO Fried Rice is Ready!
Shred the salt-baked chicken into thin slices and arrange them on top of the XO fried rice.
Garnish with the complementary green shallot oil.
Season with a dash of the Japanese chili powder mix.
