1/2 Cup of Granulated Sugar
4 Tablespoons of Unsalted Butter
1/4 Teaspoon of Salt - to taste
3 Tablespoons of heavy cream
1/4 Unsweeted Chocolate - Cadbury Melts will do
115 grams Unsalted Butter
1 Cup of Granulated Sugar
2 Large Eggs
2 Teaspoon of Vanilla Extract
150/160ml of Flour - Plain
Put the sugar into a pan and melt until it's a coppery colour ( see picture) this should take about 5 minutes
Take the melted sugar off the heat and add the butter and cream and stir until dissolved - put back over the heat if not dissolving properly. Make sure that the melted sugar isn't left for too long as it will go hard.
Sprinkle in some salt - this is optional
Once you're happy with how the melted caramel looks, pour it onto a grease proof piece of paper; you can place the paper into a tray and pour in the caramel, as you have to put it into the freezer for 20mins to set.
For the brownies, melt 1/4 of a cup of unsweetened chocolate and butter.
Once it's thoroughly melted add the rest of the ingredients, first starting with the sugar, then the eggs and vanilla extract; stir in the eggs until they are mixed in well, then finally add the flour. Do the flour in parts so that it makes it easier to mix.
Make sure to check your caramel in the freezer; the caramel should cut into nice little square cubes, like the size of caramel sweets you buy.
Mix in the sliced up caramel into the brownie mixture and once you have done this you can pour the whole thing int a rectangular baking tray.
The brownies take 30 mins to cook and to check that they're cooked properly just insert a toothpick in. If the toothpick comes out clean, then they're ready.
Tip: If you don't let the caramel set properly you'll end up with a gooey batch of brownies. They don't look as presentable but still taste just as good.
