Carrots are the bright veggies which are proven to give you sparkly eyes, but are generally the forgotten vegetable. When carrots become lost at the bottom of the vegetable or fridge drawer they can look less than appetising. All these carrots need, however, is a peel, so don't thrown them away, follow this recipe and eat your carrots today.
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 4 servings
Ingredients
10 carrots
1 tsp butter
1/2 tsp black pepper
Sprig thyme
3 basil leaves
1 satsuma
Method
Simmer in a saucepan of boiling water for 10 minutes, then remove and chop the top and tail ends off.
Toss lightly in olive oil and the juice and segments of a satsuma.
Add the seasoning and place in the oven for 20 minutes at 180 degrees/gas mark 4.
The carrots come out beautifully fragrant.
Garnish with basil and add the butter.
