Ingredients 1 or 2 tbsp oil
I onion, chopped
1 carrot, diced
1 stick of celery, sliced
500g minced lamb
1tbsp Worcestershire sauce
100ml beef or lamb stock, or just water will do
2 medium potatoes
1 medium sweet potato
About 1/4 of a swede
Salt and pepper to taste
Preheat the oven to 180°.
Fill a large pan with salted water, add the peeled and chopped potatoes, sweet potato and swede, bring to a boil and then leave to simmer.
Lightly cook the onion in a tablespoon of oil until soft, then add the sliced celery and diced carrot. Continue to cook for a couple of minutes more before removing to a plate with a slotted spoon.
If necessary add a little more oil to the pan, add the minced lamb and cook, turning, until the meat is browned.
Add the Worcestershire sauce and stock or water. Return the vegetables to the pan and leave to cook for about five minutes until the liquid has reduced a little.
Put the minced meat and vegetables into an oven proof baking dish.
Drain the potato, sweet potato and swede, then return to the pan with a knob of butter and mash until smooth.
Spoon the mashed vegetables on top of the meat, fork or decorate as you prefer, and bake in the oven for about 20 minutes until the topping is a golden colour.
Serve with a vegetable of your choice. French or runner beans work well.
