Saucy Lamb Cutlets

This is a different way to cook lamb cutlets, you just need to give yourself a little time.

Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 4 Servings

8 lamb cutlets, trimmed of fat (or more for bigger appetites)
2 eggs, beaten
Dry breadcrumbs

For the sauce
4tbsp clear honey or maple syrup
4tbsp medium brown sugar
3 tbsp orange juice
3 tbsp balsamic vinegar
2 tbsp dark soy sauce
1 tbs tomato ketchup
1 teasp Dijon mustard

Preheat the oven to 200C/Gas 6.

Put the beaten eggs onto one plate and the breadcrumbs onto another one and dip the cutlets into one followed by the other.

Arrange the cutlets in a roasting tin and cook for 20 minutes.

Dip the lamb cutlets in egg, then breadcrumbs, and place in the roasting

Put all the sauce ingredients into a small saucepan, bring to the boil, and stir until everything is well blended.

Bring the glaze ingredients to a boil

After 20 minutes turn the oven down to 180C/Gas 4, pour the sauce over the cutlets and return to the oven for a further 20 minutes.

Pour the glaze over the lamb cutlets

when the sauce will have reduced, become syrupy and glazed the cutlets.

Cook the lamb cutlets until the glaze is thick and syrupy

We love to eat this with glazed carrots and creamy mashed potatoes.

Serve the lamb cutlets with creamed potatoes and glazed carrots
