Sauteed Vegetables with Quinoa

Quinoa is a grain high in protein, iron, magnesium, and fibre; and it is often used as a substitute for pasta or rice. It is quick and easy to cook, and tastes great!

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
½ cup quinoa
1 cup quinoa
1 diced onion
Half a capsicum, chopped into cubes
Half a tin of chickpeas, drained
1/2 tsp. ground chilli
1 tbsp. soya sauce
1/2 tsp. mixed herbs

Method

Fry diced onions along with carrots.



Add water to the quinoa and bring to the boil. Turn down the heat and leave it to simmer for 20 minutes.



Add the chopped capsicum to the vegetable mix and sauté until the vegetables are tender. Then add the chickpeas, soya sauce, herbs and ground chilli and mix thoroughly.



Fork through the quinoa to make it fluffy and to loosen any clumps. Serve with the sautéed vegetables.

Quinoa makes a delicious alternative to rice or couscous
