Savoury Tofu Crepes

Absolutely loaded with protein, calcium and essential minerals, these savoury tofu crepes make a filling and very satisfying meal.

This recipe is vegan and gluten free. Safe for everyone to enjoy, but feel free to substitute in regular flour or milk if you prefer the taste and texture.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
300g silken tofu
1 cup soy milk
1 cup quinoa flakes
3/4 cup rice flour
1/4 tsp bicarb soda
1/4 tsp turmeric

Coconut/ olive oil for cooking (optional)

Method


Place all ingredients (bar the oil, if using) into a food processor, and blitz until a fine, well mixed batter is formed.



Using a non stick frying pan (may need to be greased with coconut or olive oil depending), pour 1/4 of the batter out, and shake to flatten and spread.



Flip when edges are browned, crispy, and starting to smoke, then cook on the reverse side for another 3 minutes or until golden.



Repeat with remaining mixture.



Enjoy as a traditional savoury crepe with a spread of avocado or nut butter; or alternatively, try filling one half with a fresh salad and fold over, burrito style.
