Scrambled Cottage Cheese

A simple and delicious preparation using creamed cottage cheese. Cottage cheese is a good source of protein for vegetarians and does not give too many calories. Have this with roti or naan. Reduce the moisture and it becomes a stuffing for pastry or paratha.



Preparation Time: 5 minutes
Cooking Time: 10-15 minutes
Makes: 2-3 servings

Ingredients
1/2 cup creamed cottage cheese
1/2 onion, chopped
1 small tomato, chopped
1/2 cup green peas boiled
1 teaspoon ginger-garlic paste
1/2 teaspoon cumin seeds
Pinch of turmeric
1/2 teaspoon red chili powder
1/4 teaspoon garam masala
Chopped coriander for garnishing
Salt to taste
Oil for cooking



Method
In a non-stick pan, take oil. Once its hot, add the cumin. After it splutters, add the ginger and garlic paste.



Add the onion and let it cook till transparent. Add the tomatoes and cook till it forms a slight gravy.



Add the peas. If you want the preparation to be like a gravy add some water at this stage. If you want to stuff in a pastry or paratha, you need to saute to make it quite dry. Also mash the peas.

Add salt and the spices. Add the coriander.



Add the cottage cheese last as we do not want to overcook it. Mix well and cover for 2 minutes. Keep covered and switch off heat.
