Self-saucing Chocolate Pudding

Sometimes you need to fuel your chocolate addiction. What could be more satisfying than a pudding that combines chocolate with its own sauce? This recipe serves 8, takes about 10 minutes to prepare and a further 45 to cook. You need to factor in several hours chilling before baking, or you could just prepare everything the night before and leave it in the fridge.

The Cooked Chocolate Pudding


Butter, for greasing the baking dish
60g golden caster
2 tbsp baking powder
2 tbsp cocoa powder
1120ml milk
40g butter, melted
1 egg
Vanilla extract, one or two drops
60g chopped walnuts, or chocolate drops (I used white). These are optional


180g muscovado sugar
2 tbsp cocoa powder
250ml boiling water

The Cooked Chocolate Pudding


Butter a 1 litre baking dish. Sieve the flour, caster sugar, baking powder and cocoa into a bowl.

Melt the butter in a small saucepan; add the milk, vanilla and egg.

Mix both sets of ingredients together, add the nuts or chocolate drops and transfer the mixture to the pie dish.

Cover with cling film and leave to set in the fridge until you are ready to cook the pudding.

Preheat the oven to 180⁰/160⁰fan/Gas 4. Mix the cocoa powder and muscovado sugar and sprinkle over the top of the pudding and lastly pour on the boiling water.

Bake in the centre of the oven for about 45 minutes until the pudding is firm in the centre and puffy on top. Serve with vanilla ice cream or cream.

There is no flour in this recipe - seems odd. The amount of milk is also extraordinary. Perhaps it has been written out incorrectly. This recipe makes no sense to me whatsoever.
