Sesame Burgers

These bad boys benefit from a smoky eggplant flavour that will have even the most meat craving individuals begging for more. Chickpeas provide a great source of manganese, for bone and ligament health and fibre, which helps reduce cravings and keeps you full.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 8 burgers

2 tbsp coconut oil
1 brown onion, sliced thinly
1 eggplant, sliced
1 large tomato, sliced thinly
400g tinned chickpeas, rinsed and drained
1/2 clove garlic
10g coriander, roughly chopped
160g oats
50g sesame seeds

In a pan, heat 1 tbsp of the coconut oil over a medium heat. Once warmed, add the onion and sauté for 2 mins before adding the eggplant.

Cook until eggplant just browned and tender, and then add the tomato. Leave on heat for a further 5 mins and then remove and allow to cool.

In a blender or food processor, combine the eggplant mixture, chickpeas, garlic and coriander. Pulse until a smooth consistency formed.

Add half the oats and sesame seeds and blend until mixed through. Move the dough into a bowl, and knead through the remaining oats and seeds combining thoroughly.

Split the mixture into 8, and flatten into the patty shape. Cook in the remaining coconut oil over a medium hear until each side is a golden brown.

Can be enjoyed accompanied either with a simple salad, or in the more traditional way between two slices of toasted bun and drizzled with a sauce.

Just made these! They are so good I love the use of oats. I used basil instead of coriander and chia seeds instead of sesame as I had them on hand and they are lovely! Thanks for sharing :) .
