Shakshouka Eggs

In Israel the word shakshouka is synonymous with breakfast. This wonderfully aromatic meal is a one-pan recipe consisting of eggs baked in a tomato sauce spiced with cumin, paprika and cayenne pepper.



Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 1 serving

Ingredients
1 cup tomato sauce
2 eggs
1 tablespoon feta
1 teaspoon dukka
¼ teaspoon ground cumin
¼ teaspoon sweet paprika
⅛ teaspoon cayenne
¼teaspoon salt - more as needed
¼ teaspoon black pepper - more as needed

Turkish bread and bacon (optional) to serve.




Method
First make the tomato sauce. If your sauce is already made simply mix in all the spices and pour into an oven safe dish.



Gently crack each egg into the pot, nestling them into the sauce.



Place the pot into a 210 degree oven and cook for 12-15 minutes.



Whilst the eggs are cooking toast your Turkish roll and cook any other sides you desire.

Once the eggs are cooked, remove from the oven, sprinkle with feta, dukka and herbs and enjoy!
