Simmered Jerk Chicken with Zucchini & Mushrooms

Scotch bonnet is an exceptionally hot pepper. It gives cooking a unique flavour. If you have never tried scotch bonnet before and you are crazy about heat, you have to try this!



Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 6 servings

Ingredients
8 chicken thigh fillets, cut into bite-size pieces
2 zucchinis, slice into small pieces
10 brown mushrooms, quartered
1 scotch bonnet, finely diced
2 cubes vegetable stock



Method
Heat 2 tablespoons vegetable oil in a large saucepan. Add in the scotch bonnet and fry for few seconds.



Add in the chicken pieces and cook until the chicke turns white.



Add in the zucchinis slices. Mix well.



Cover and leave it to cook in the steam for 5 minutes.



Add in the mushroom. Mix well.



Add in the vegetable stock cubes and pour in 1 cup of water.



Mix well and cover. Leave it to simmer for 5 minutes.



Serve with brown rice.
