This is one of my favourite recipes. It uses very simple ingredients that you can find around the house and anyone can make it. It's basically fail proof. The almond bread goes great with coffee or tea. It's also a great midnight snack you can enjoy without feeling too guilty.
Preparation Time: 10 minutes
Cooking Time: Approx 60 minutes in total
Makes: 30-40 pieces, depending on width
Ingredients 3 egg whites
1/2 cup caster sugar
1 cup plain flour
250g whole almonds
Beat egg whites until soft peaks form.
Gradually add the sugar and beat until dissolved.
Fold in sifted flour and almonds. (Mixture will become thick)
Spread the mixture into a greased log tin.
Bake at 180°C for 30 minutes.
Leave till rest and when cool, wrap the loaf in aluminium foil and leave to rest for 1-2 days.
Cut into thin slices with a sharp knife and place slices in a single layer onto a baking tray.
Bake the thin slices at 150°C for 35 minutes or until dry and crispy.
