Simple Berry Bircher

Bircher mueslie used to be my favourite go to breakfast. I would eat it everyday and dress it up with different fruits, nuts, seeds, spices, nut butters, sugars and so on. Since turning vegan I have not eaten bircher due to the yogurt. I found some soy yogurt at Coles this week and thought I would give my old favourite a try. I was not disappointed.



Preparation Time: 60 minutes
Cooking Time: 0 minutes
Makes: 1 servings

Ingredients
3/4 cup rolled oats
3/4 cup water
2 tbsp. soy yogurt
Handful of mixed berries
1 tbsp. sunflower seeds
1 tsp cinnamon
1 tsp peanut butter
1tsp coconut sugar

Method
Place the oats and the water in the bowl you are going to serve it in and leave to soak for 30 minutes or until the water is gone.

Once soaked add the soy yogurt, stir it through then prep your other ingredients.

Top with seeds, fruits, nuts or just enjoy plain. This can be eaten straight away or kept in the fridge (without toppings) for 3 days.


NOTES:
Some recipes call for juice instead of water for soaking. As I used a flavoured yogurt it was already sweet enough. If you are using greek or plain yogurt soak with orange or apple juice or add more sugar/syrup to sweeten up.
