Simple Chicken and Garlic Risotto

Simple to make creamy risotto. Best eaten freshly cooked, but can be reheated in microwave the next day. Refrigerate if keeping overnight.

Chicken and Garlic Risotto


Preparation Time: 10 minutes
Cooking Time: 30-40 minutes
Makes: 4-6 servings

Ingredients
4 chicken thigh fillets, cut into pieces
3 Tablespoons olive oil
Salt
Pepper
1 onion, finely chopped
3 cloves garlic, crushed
2 cups uncooked long grain rice
4 to 6 cups chicken stock
1 cup grated Parmesan or Mozarella cheese
2 Tablespoons butter

Method
Step 1
Sprinkle chicken with salt and pepper.

Step 2
In heavy saucepan, heat olive oil over medium heat. Add onion and garlic, and cook for 5 minutes until tender.

Step 3
Add chicken pieces and cook, stirring until chicken starts to brown.

Step 4
Add rice to pot and stir to coat.

Step 5
Add 1 cup chicken stock and cook until liquid is reduced. Stir frequently.

Step 6
Continue to add chicken stock and stir.

Step 7
Cook for a total of about 30 minutes until rice is tender.

Step 8
Add cheese, and butter just before serving and stir to melt.
