Simple Chocolate & Almond Biscotti

These are a great stand by that can last for months -if you have willpower.
They are baked twice however are really easy to make and taste excellent.

Preparation Time: 15 minutes
Cooking Time: 60 minutes
Makes: 40 -50 servings

1 3/4 cups plain flour, sifted
1 1/2 tsp baking powder
1/4 cup cocoa powder, sifted
3/4 cup caster sugar
3/4 cup blanched almonds
3 eggs
2 1/2 tsp vanilla extract

Preheat oven to 160C

Place the flour, baking powder, cocoa, sugar and almonds in a bowl and combine. I did not have enough blanched almonds, so ordinary almonds also work.

Add the eggs and vanilla and mix well to form a dough.

Divide into two.

Place on a lightly floured surface and knead each piece until smooth. You may need to add a bit more flour if you have used large eggs. Shape them into two logs and flatten slightly.

Then place on a baking tray lined with baking paper, and bake for 30 minutes.

Remove from oven and allow to cool completely.

Cut into about 5 mm thick slices and place on baking trays lined with baking paper. Bake, turning once, for 25 minutes. Do not over bake as you cannot see when these are burning.

Serve with tea or coffee or just eat as a snack.
