What to do with the left over Christmas Ham Hock? Turn it into this easy, hearty and delicious Pea and Ham Soup. Make up a big batch and the family will love you for it.

Simmer for an hour and a half
Preparation Time: 10 minutes
Cooking Time: 90 minutes
Makes: Large saucepan
Ingredients
400g yellow or green split peas
1 large onion
2 carrots, peeled and diced
1 ham hock
3 litres filtered water
3 cloves garlic
1 teaspoon thyme leaves
Pepper to taste

Add little chunks of ham
Method
Combine all ingredients in a large saucepan, bring to the boil.
Cover and simmer for 90 minutes until peas are soft.
Remove bones. Add any leftover bits of ham. Blend all together until smooth.
Serve steaming hot with croutons (or little chunks of fried bread).
