Ingredients 6-9 well sized potatoes, brushed
500 grams of organic greek yoghurt
3 cloves of garlic
Bunch of parsley and dill to taste
Brush the potatoes to cleanse them of soil and other debris. Then add to a pot of water and bring to a gentle boil.
Finely chop the onion, garlic and herbs and add to the yoghurt. In this case I simply mixed the ingredients within the tub.
Pour the contents of the yoghurt tub into a bowl to serve.
Check the potatoes regurlarly. After about 30-40 minutes or when they are soft enough for a fork to easily slip into and out of them they are ready and can be drained and served with the tzatziki. Bon apetit!
