Skirlie, or oatmeal stuffing, is a traditional Scottish dish. You can make it with beef dripping, or just use butter, which I have done to make this dish vegetarian. Where I come from in Angus, It's also traditionally used as a stuffing for chicken or turkey instead of sage and onion. It's a tasty savoury treat that is quick and easy to make.

This is a very simple dish, with only a few ingredients.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 6-8 servings

Make sure that you use pinhead oatmeal not normal porridge oats, or you won't get proper stuffing.

50g butter
1 large onion, finely chopped
175g pinhead oatmeal
Pinch of salt and pepper, to taste

Finely chopped onion adds flavour to any dish, but especially to this one.

Melt the butter in a heavy-bottomed frying pan over a medium heat, and then fry the onion gently until softened.
Stir in the oatmeal and cook for about 10 minutes.
Season well with salt and pepper to taste.
