'Slendier' Marinara

In our house we are trying to loose a little bit of weight by cutting portion sizes, especially with carbs. This is why I thought to try out a recipe using 'Slendier Pasta' a new prouduct which boasts low calories. It is a slightly chewier and blander form of pasta that requires a strong flavoured sauce accompaniment.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
2 packs of Slendier pasta
400gms of marinara mix
1/2 cup of tomato paste
2 large fresh tomatoes
1 small brown onion
2 cloves garlic
fresh herbs (I used marjorham and thyme)
1 fresh lemon (grate the zest and squeeze for the juice)

Method

In a frying pan, saute the chopped onion and garlic in a teaspoon of cocnut oil until soft. Add the chopped tomato and saute for another minute. Add the tomato paste, half a cup of water, grated lemon zest and juice, salt and pepper and turn up the heat.

Add the marinara mix, stiring constantly on high. It should take about 5 minutes on a high heat to cook the seafood properly. To check this, wait until the fish pieces are fully white.



Meanwhile rinse the Slendier pasta. Just before the marinara mix is done, place the rinsed pasta in a pot of boiling water to warm for 1 minute.

Serve the pasta in a bowl topped with the marinara mix and a midge of mozarella.
