Slow Cooker White Wine Chicken

Slow cooker meals don't have to be all about stews or bolognaise. This chicken dish is smothered in a tasty creamy white wine sauce and makes a great family meal.

Slow cooker, chicken

Preparation Time: 10 minutes
Cooking Time: 8 hours
Serves: 4

4 chicken breasts
25 g butter
1 onion, roughly chopped
1 red pepper, finely sliced
3 tbsp. cornflour
3 tbsp. white wine
650 ml chicken stock
1 tsp mixed dried herbs
2 egg yolks
100 ml double cream
Salt & pepper

Melt the butter in a frying pan over a medium high heat and cook the chicken until sealed on all sides. Remove and place in the slow cooker.
Into the frying pan, add the onion and red pepper and fry until both are slightly softened then place into the slow cooker with the chicken.
Add a little water to the cornflour and mix to form a paste and then place into the slow cooker along with the white wine, herbs and stock. Bring the temperature up to a boil with the slow cooker on high.

Slow Cooker White Wine Chicken

Reduce the slow cooker to 'low' and leave for 6-8 hours.
Once you're ready to eat, mix the egg yolks and cream together and then add into the slow cooker. Mix well for a couple of minutes so that the sauce thickens.

This is great served with pasta or rice.
