Smoked Pork Dinner

I'm not usually a fan of pork, but after making this meal for my friends and myself, I'm a convert: this is a juicy, full flavoured smoked pork dinner.

Preparation Time: 10 minutes
Cooking Time: 50 minutes
Makes: 5 servings

Ingredients
1 smoked pork joint
1 bunch of radishes
1 apple
1 avocado
1 red onion
1 celeriac
Black pepper

Method
You must cook the meat first. Line a baking tray with foil and place the pork in the middle. Put in the oven for 50 minutes at 160 degrees/gas mark 3.



While the pork slowly tenderises and cooks start the veggies:

Celeriac can be a pain to peel, but it's worth it, so bear with the trying vegetable.

Peel and chop roughly and place the chunks into a saucepan of boiling water for 15 minutes/until soft.

While the celeriac is boiling place the apple in the oven on the top shelf for 15 minutes.



Finely chop the onion and fry on a medium heat for 15 minutes. Once the onions have softened put to one side.

Drain the celeriac and add a generous amount of butter and mash to your preferred consistency.

Fresh radishes


Wash the bunch of radishes and finely slice.



Halve the avocado and chop into chunks.

Place the avocado and radishes aside.

Remove the pork from the oven and marvel at it's juiciness.

Juicy pork


Slice the pork and plate up alongside the celeriac mash, the radishes, onions, and avocado. Garnish with the baked apple slices.
