Smoked Salmon & Dill Gnocchi

Gnocchi is possibly the most indulgent of pasta dishes and the addition of smoked salmon and cream cheese make this extra special. This rich dish is impressive and your guests won't guess how easy and quick it is to make!

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2-3 servings

1 x 500g bag fresh gnocchi
4 x strips of smoked salmon
4 x tablespoons cream cheese
1 large handful of fresh dill
A quarter of a fresh lemon
Ground black pepper (to taste)

Finely chop the dill.

Place a litre of water into a pan and add a teaspoon of salt.
Bring water to the boil.

Place the gnocchi into the pan and cook.

Drain the pasta

Add the cream cheese to the pan and stir until melted in and all of the gnocchi is coated.

Chop the smoked salmon into small pieces (approx 1-2 cm) into the pan using scissors.

Add in the chopped dill and stir all together.

Season with freshly milled black pepper to taste.

Squeeze in a quarter of a lemon

Turn onto individual plates and serve with green vegetables such as broccoli and a green salad
