Smoked Salmon Rillettes

This is a simple but a sophisticated spreadable smoked salmon pate. The rillettes can be made in advance and refrigerated for up to 2 days. It is a winning combination and will definitely impress your friends. Perfectly elegant and scrumptious for a dinner party too.


Preparation Time: 5 minutes
Cooking Time: 2 minutes
Makes: 8 servings



Ingredients
500g smoked salmon
1 small French onion
Juice of 1/2 lemon
50g fresh dill
Salt & pepper
8 Rivita Wholegrain Crispbread


Method
Check smoked salmon for fine fish bones.



Place smoked salmon, French onion and dill into the blender.
Add lemon juice.



Set on high and blend the mixture coarsely.



Season with rock salt and cracked pepper.


Spread the smoked salmon rillettes on the crispbread. You can substitute with toasted sourdough baguette, too.



Serve and enjoy.
