Smoked salmon with olives and lemon vinaigrette


This smoked salmon salad with olives and lemon vinaigrette is our favourite when we want a quick, fresh, tasty date night meal. There is a good crunch with the salad, creaminess with the avocado and zing with the lemon. It is gluten free and low FODMAP. I served this meal the other night, followed by the Date Night Chocolate Strawberries for dessert - decadent.

Preparation Time: 10 minutes
Cooking Time: 10 minutes.
Serves: 2

Ingredients
200 g smoked salmon
Cos or iceberg lettuce, cut
10 cm cucumber, sliced
1/2 red capsicum, sliced
1 tomato, cut
1 avocado, sliced
14 kalamata olives, cut
1 lemon, zested and juiced
2 tbsp olive oil
2 tbsp vinegar
Salt and cracked pepper, to taste

Method
Whisk the lemon juice, 1/2 lemon zest, olive oil and vinegar until combined. Add salt and cracked pepper to taste. Set aside.



Smoked salmon with olives and lemon vinaigrette
Adding the zest to the lemon vinaigrette gives it an extra zing.


Arrange the lettuce, tomato, cucumber, capsicum, avocado and olives on two serving plates.
Roll the salmon into rosettes and place on the plates.
Drizzle the lemon vinaigrette and crack some pepper on top. Serve. Enjoy.

Rolling the salmon into rosettes is a fun way to present the salmon.


Tip
Add sliced onion or capers.
Add pepitas for extra texture and flavour.
