Ingredients 4 wraps of your choice, rye or wholemeal are ideal
100g smoked salmon, sliced
4 hard boiled eggs, peeled and chopped
300g iceberg lettuce, coarsely shredded
4 tablespoons mayonnaise, such as SW
2 teaspoons finely grated lemon rind
2 teaspoons finely chopped capers
Salt & freshly ground black pepper
Lay bread on a board and divide smoked ocean salmon along one edge of each piece of bread.
In a large bowl, toss egg and lettuce together.
In a small bowl, whisk together mayonnaise, lemon rind and capers.
Season with salt and pepper and fold through the egg and lettuce.
Pile salad onto wraps and roll up firmly to enclose.
