This fried chicken is so good it'll make you forget all about KFC. It's not something you can whip up spur of the moment, but the wait is well and truly worth it. So, how about next time you're planning on having KFC you try this little beauty instead.
Ingredients 2 cups buttermilk
1 tbs Dijon mustard
1 tsp salt
1 tsp ground black pepper
8 chicken pieces
2 cups SR flour
1 tbs garlic powder
1 tbs onion powder
Oil for deep frying
In a large bowl, whisk together the buttermilk, mustard, salt and pepper. Add the chicken pieces and cover. Allow to marinate in the refrigerator for 2 to 8 hours.
Combine the flour, garlic and onion powder in a large plastic bag and shake ingredients to mix thoroughly. Add chicken one piece at a time to the bag and shake until the chicken piece is completely covered. Once all pieces are covered, dip each piece back in the buttermilk marinade and then add to the bag and shake until completely covered again.
Deep fry, I use setting 7 on my deep fryer and fry the chicken for 10 mins before checking it. If the chicken is not done I pop it back in the fryer for a few more minutes.
Drain on paper towel before serving with hot chips, mashed potato or salad.
