5 dried chillies (depends on how hot you like it)
1 small onion
2 cloves of garlic
1 beef sausage
2 tablespoon tomato sauce
1 teaspoon oyster sauce
Salt, black pepper, white pepper, sugar and Italian herbs to taste
Olive oil for frying
(Optional, as an alternative to sugar) 1 teaspoon of sweet chilli sauce
Boil the spaghetti and remove from the water once soft.
Soak the dried chillies in hot water for 5 minutes, or until they are soft.
In the meantime, dice the small onion and garlic.
When the dried chillies have soften, blend them together with the 1/2 of the onions and garlic.
Heat up the olive oil in a saute pan.
When the oil is hot, saute the remaining onion and garlic until the onion become translucent.
In the meantime, cut open the casing of the sausage and shape the beef into small meatballs.
Add the meatballs to the pan and fry them.
Add in the blended chillies to the pan.
Add in the tomato sauce and oyster sauce.
Add in some water and let it simmer for 4 to 5 minutes.
Once the sauce has thickened, add salt, black pepper, white pepper, sugar and Italian herbs to taste.
Add in the spaghetti and mix well.
Garnish with some Italian herbs on top and serve warm.
Tips for measuring spaghetti
Use your thumb and index finger
Make a small circle bringing the tip of the index finger to the first joint of the thumb (the lowest one, the one joining your thumb to your palm)
Take enough spaghetti to fit through the small circle. That is usually enough for one person (me)
