Ingredients 4 cups boiled white rice
1 large onion
1 tsp crushed garlic
1/2 tsp chilli flakes
1 1/2 cups of peas
1 cup of carrots
400g baby corn
1 can of sprimp
3/4 cup of soy sauce
150g bacon pieces
5 spring onions
2 tbs oil
1 can of bean shoots
Pepper & salt
Cook the rice the night before and spread on a tray for it to dry in the fridge.
In a hot wok saute your onion in the oil and then add garlic, chilli flakes and bacon pieces.
When the onion is cooked through and the bacon is browned, remove from the wok.
Whisk the 2 eggs in a cup and then add them to the wok.
Allow them to cook before breaking up with your wooden spoon.
Pour your onion and bacon back into the wok.
To this add all your other ingredients; mushrooms, carrots, peas, bean shoots, shrimp, spring onions and corn.
