Special Shakshuka

The addition of feta and coriander adds a twist to this classic Middle Eastern dish - delicious for either breakfast or lunch



Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 2-4 servings



Ingredients
2 tbsp olive oil
400g tinned chopped tomatoes
2 small onions, halved and finely sliced
2-4 eggs depending on taste
2 tsp dried thyme or fresh thyme leaves
2 garlic cloves, chopped
1/2 fresh chilli, de-seeded
1 tsp sumac
150g feta cheese, crumbled
Small handful of fresh coriander leaves
Small knob of butter
Fresh bread to serve



Method
Warm the oil n a medium frying pan
Add the onion and thyme and gently sauté until onions soften and become golden
Add the garlic and chilli - stir in for a moment
Add the tomatoes, season and simmer the sauce until thickened slightly
Make as well with a spoon in each half of the sauce and break 1 x egg into it (do the same for all 4 eggs if using)
Sprinkle half of the sumac onto the eggs
Season the sauce
Cook until the eggs are poached - about 15 - 20 mins
Warm the butter in a small saucepan, add the rest of the sumac, stir, then trickle over the eggs.
Remove from the heat
Crumble the cheese on top and sprinkle on the coriander
Serve with warm or crusty bread

I ate this divine dish for the first time in Jaffa at a restaurant that specialises in making Shakshuka, called Dr Shakshuka. Even my carnivorous OH was seriously impressed.
