Spiced Rhubarb Compot

A compote is essentially a fruit stew. With the addition of spices and vanilla this compote is the perfect topping for muesli, yogurt, ice cream or toast instead of jam.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 8 servings

Ingredients
5 cups diced rhubarb
1/2 tbsp cinnamon
1 vanilla bean
1/2 lemon
1/2 c brown sugar
2 tbsp water



Method
Cut the rhubarb into 1 inch pieces.

Place the rhubarb in a hot pan with the water, brown sugar, cinnamon and vanilla.


Bring to the boil then reduce to a simmer, squeeze in the lemon juice and stir. Rhubarb falls apart completely and become mush, remove the fruit from the heat when you have the desired texture.


I like to still have chunks in my compote so remove the stew when only half the fruit has been reduced.

Pour the hot compote into sterilized jars to store.


Enjoy on a variety of dishes or give as a gift.

NOTE: Store in the fridge once a jar has been reopened like regular jam.
