Spiced Tea Loaf

This is a lovely, moist cake to enjoy for morning or afternoon tea. It tastes great and hasn't got any added milk or butter.

Preparation Time: 20 minutes and 2 hours to steep
Cooking Time: 35 - 40 minutes
Serves: makes 1 loaf

Ingredients
1 cup self raising flour
1/2 cup brown sugar
1 1/4 cup mixed dried fruit
1 egg
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
2 tablespoons marmalade
1 cup hot black tea

Method
Place the fruit in a small bowl and pour over the hot tea, leave to steep for 2 - 4 hours.



Soak the fruit in the tea.


Grease and line a 10 x 20 cm loaf pan. Preheat the oven to 170 degrees.

Sift the flour and spices into a large bowl. Add the brown sugar and stir to combine.
Lightly beat the egg, stir into the fruit mixture with the marmalade. Pour in with the dry ingredients and mix well to form a smooth batter.



Soak the fruit in the tea.


Pour the mixture into the prepared loaf pan and place into the centre of the oven. Bake for 35 - 40 minutes until a skewer inserted into the centre comes out clean.
