Spicy and Crunchy Snack - Puffed Rice with Vegetables and Chickpea

Spicy Puffed Rice with vegetables

The spicy puffed rice snack is one of the famous street foods in India. This is a low fat, nutritious snack which is very easy to make.

Feel free to add your favourite vegetables and flavours. Instead of chickpea, you can use roasted peanuts and flavour with fresh cilantro or parsley leaves.

Preparation Time: 10 minutes
Cooking Time: 3 minutes
Makes: 2 servings

2 cups of puffed rice
2 tbsp onion, finely chopped
1/8 cup tomato, chopped
1/8 cup cucumber, chopped
1/8 cup chickpea, cooked
1/4 tsp all spice mix
A pinch of chilli powder (optional)
Curry leaves
Salt to taste

Dry roast the puffed rice in a pan on medium-low heat for 2-3 minutes. Let it cool. Roasting will help to restore the crispiness and freshness of puffed rice.

Spicy Puffed Rice with vegetables

Now combine together the chopped onion, cucumber, tomato, chickpea, spice mix, curry leaves, chilli powder and salt in a bowl.

Add the roasted puffed rice into the vegetable mix. Mix well to combine. Let it sit for 2 minutes.

Transfer to a serving bowl. Enjoy a healthy snack.
