Ingredients 2 cups of puffed rice
2 tbsp onion, finely chopped
1/8 cup tomato, chopped
1/8 cup cucumber, chopped
1/8 cup chickpea, cooked
1/4 tsp all spice mix
A pinch of chilli powder (optional)
Salt to taste
Dry roast the puffed rice in a pan on medium-low heat for 2-3 minutes. Let it cool. Roasting will help to restore the crispiness and freshness of puffed rice.
Now combine together the chopped onion, cucumber, tomato, chickpea, spice mix, curry leaves, chilli powder and salt in a bowl.
Add the roasted puffed rice into the vegetable mix. Mix well to combine. Let it sit for 2 minutes.
Transfer to a serving bowl. Enjoy a healthy snack.
