Spicy Cauliflower Patties

Inspired by a Middle Eastern dish, these crispy cauliflower patties are a great and creative way to add more of the cruciferous vegetable to your diet.

Not only are these veggies high in fibre and mineral dense, they have also been shown to have links with cancer prevention and protection.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 12 patties

1 small cauliflower
1/2 brown onion
1/2 cup chickpea flour (besan)
1 tsp coriander powder
1 tsp ground cumin
2 tsp crushed garlic
1 tsp ginger, grated
1 tsp turmeric powder
2 tbsp chia seeds (mixed with 6 tbsp water) OR
1 egg

coconut oil for frying, or alternative

In a food processor, blitz the cauliflower and onion until a fine, rough flour is formed.

Add the rest of the ingredients (aside from the oil) and mix thoroughly so the spices coat the cauliflower and onion evenly.

Using a frying pan, heat the oil over a medium high heat. Separate mixture into twelve round balls and flatten to cook. Fry 4-5 mins each side, or until browned and cooked through.

Serve either hot or cold in a traditional burger or wrap, or get creative and find other ways to add this healthy and tasty to your meals!
