Spicy Chicken Koftas

BBQ, chicken, kofta, kebab


I made these spicy chicken koftas for an impromptu BBQ. They are really tasty and an unusual addition to the usual burgers and sausages.

Preparation Time: 15 minutes
Cooking Time: 10-15 minutes
Makes: 4 servings

Ingredients
3 large chicken breasts
3 garlic cloves
1 fresh red chilli
1tsp diced galangal (you could also use ginger)
1 tsp garam massala

Pitta bread, salad and coleslaw to serve

Method
Deseed and roughly chop the chilli.
Roughly chop the garlic cloves.
Dice the chicken into chunks.
Place the garlic, chilli and galangal in a food processor and pulse.

Add in the chicken, garam massala and whizz until finely chopped into a mince.

Wet your hands to stop the mixture sticking and then divide the mixture into 12.
Form into 12 balls and thread three onto a skewer.
Repeat until you have 4 skewers with 3 balls on each. My chicken breasts were large so I managed to make a couple of extra balls.

Cook over a hot BBQ or grill.

These taste great served in a warm pitta pocket with fresh crisp salad leaves and some creamy coleslaw.
