Spicy Chicken Rice Bake

This Spicy Chicken Rice Bake is an easy dish to make using simple ingredients. Everyone will love the delicious Mexican inspired flavours.

Spicy Chicken Rice Bake.

Preparation Time: 20 minutes
Cooking Time: 50 minutes
Serves: 4

3-4 chicken thigh fillets
1 can diced tomatoes
1/2 red capsicum diced
1 carrot peeled and diced
1/2 brown onion peeled and diced
1/2 cup corn kernels
1-3 large green chillies finely chopped
1 teaspoon crushed garlic
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon onion powder
1 teaspoon dried oregano
150 grams white long grain rice
1 1/2 cups chicken stock
2 tablespoons olive oil
1 cup cheese (tasty, mozzarella and Parmesan)
salt and pepper to taste

Preheat oven to 180 degrees
Cut the chicken into bite sized cubes.
Heat half the oil in a large saucepan to medium high heat. Add the chicken to the pan. Cook until coloured, but not cooked through. Set aside.

Brown the chicken in the pan

Add the remaining oil to the pan and lower the heat to medium. Put in all of the diced vegetables, and saute for 5 minutes until softened.
Stir in the rice, chilli, garlic and spices.

Add spices, chilli, garlic and rice.

Cook until fragrant and the rice has been coated in oil.
Return chicken to the pan with the stock, corn, oregano and tomatoes. Turn down the heat, cover, and simmer for 15-18 minutes.
When the rice is cooked, and the liquid is almost absorbed, remove pan from the heat. Season, then stir in 1/3 of the cheese. Transfer mixture to a large baking dish.

Transfer to a large baking dish.

Sprinkle on the remaining cheese.
Bake for 15 minutes, or until golden brown and bubbling.
