Spicy Fish In Ginger Garlic Sauce

I love fish. I can do so much with it in very little time. It can taste delicious with very few ingredients and it is super light for my digestive system. So, when I decided to cook fish last night, I was in no mood to use four types of sauce. I did not want to make an Indian fish curry either. Pan-fried or baked fish does not go well with sticky rice. So, I came up with a recipe using a lot of ginger and garlic with some soy sauce. I am not sure if it belongs to any particular cuisine. Please feel free to modify the amount of ginger, garlic or red chilies based on your taste.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 3-4 servings

900-gram fresh Basa fillet
4-tablespoon oil
6-7 cloves of garlic
4-5 dry red chillies
1 medium red onion
2-tablespoon corn flour
5 gram or 2-tablespoon of grated ginger
2 small or 1 medium green/red capsicum
1-tablespoon dark soy sauce
1-tablespoon light soy sauce

2-tablespoon corn flour
4-tablespoon lemon juice
1-teaspoon salt or as per your taste
1 tablespoon ginger garlic paste
1-tablespoon of chili flakes
2 egg whites

Marinate the fish in lemon juice, 2-tablespoon corn flour, egg whites, salt, ginger garlic paste and chili flakes for 15 minutes.

After 15 minutes, shallow fry the fish pieces. The fish can be deep fried as well for extra crunchy flavor. I shallow fried it on very low flame until it was partially brown. Do not toss it around a lot as it may break the fish pieces. If you decide to shallow fry, use a flat spatula to turn them over.

Keep the fish aside.
Crush garlic cloves and cut onion and capsicum into large squares.
Heat 3-4 tablespoon of oil in a wok and quickly add some crushed garlic.
After few seconds, add onion and ginger. Stir-fry until onion looks translucent.
Add dry red chillies.
Add capsicum and toss it around for few minutes. Do not overcook the capsicum.

Add water. The quantity of water depends on the amount of sauce needed.
Mix 2 tablespoon of corn flour in 4 tablespoon of water until it is fully dissolved.
Add it to the sauce in the wok.
Add soy sauce. Let it cook on medium heat until it starts turning thick.
Add fish pieces.

Boil for another 3-4 minutes on high heat.
Turn off the heat and cover the wok for 5 minutes.
Serve it with rice.
