Spicy Ginger Curry

Spicy ginger curry

The ginger curry is a perfect blend of sweet, sour and spicy flavours. Since ginger helps digestion and gastrointestinal irritations, this can be served with a heavy meal. You can also use this as a pickle.

The curry will stay fresh for a longer period since it contains tamarind. Jaggery is added to balance all the flavours. You can have a plateful of rice with a single spoon of ginger curry.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 10 servings

Ingredients
200 g ginger
1/2 of medium size onion
4 green chilli
8 garlic cloves
1.5 tbsp tamarind paste
1.5 cup water
1/2 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp chilli powder
1 tsp jaggery powder
1 tsp mustard seed
3 tbsp coconut oil
Curry leaves
Salt to taste

Method
Mix the water and tamarind paste. Stir well to combine and keep aside.

Finely chop the ginger, onion, garlic, green chilli and curry leaves.

Heat oil in a pan. Crackle the mustard seed. Then add chopped onion and saute for 2 minutes on medium heat. Then add the ginger and stir-fry for 6 minutes.

Then add the garlic, green chilli and curry leaves and cook until the ginger is golden brown.

Then add the coriander powder, chilli powder and turmeric powder and stir-fry for a few seconds.

Add the tamarind water and salt into it and mix well. Cook until almost all the water is evaporated and the gravy is thick.

When you see the oil oozing along the sides of the pan, remove from heat.

Add jaggery powder and mix well.
