Spicy Lentil Soup

The perfect dish for a cosy night in during winter. For a vegan recipe, chose the vegetable stock over chicken stock.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 4 servings

Ingredients
2 carrots, finely diced
2 celery stalks, chopped
1 onion, finely chopped
4 cloves garlic, chopped
1-2 chillies, unseeded, finely sliced
1/2 tsp ground cumin
1/2 tsp turmeric
1 tbsp coriander
1/2 tsp chilli powder
2 tbsp tomato paste
1 1/2 cups red lentils
6 cups chicken or vegetable stock
250g baby spinach leaves
chia seeds (optional)


Method
Heat olive oil in a soup pot over medium-high heat. Add chopped carrots, celery, onions, garlic and chilli pepper, and season with salt and pepper. Cook until softened, 8-10 minutes.
Add spices and stir for a minute then add tomato paste and cook for another minute more.
Add lentils and stock, and bring soup to a boil. Cook until lentils are very tender, about 30-40 minutes.
Once cooked, stir through spinach and turn off heat.
Serve soup with fresh spinach leaves and chia seeds to garnish.
