Spicy Minestrone

This spicy minestrone is a great lunch idea or perfect for a winter entree.

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Makes: 6 servings

Ingredients
2 small onions
2 rashers of bacon, sliced
1 tbs butter
2 cups of celery, sliced
1 heaped tbs crushed garlic
¼ cup of soup mix
1 tsp cumin
1 tsp cayenne pepper
2 tsp dried parsley
3 cups of chicken stock
1 cup of shell pasta
3 cups of mixed vegetables
½ zucchini, diced
3 cups of tomatoes, chopped
4 cups of water

Method
In a large pot, melt the butter and sauté the onion and bacon.



When the bacon is coloured, add the celery, garlic, cumin, cayenne pepper and parsley.



Chop up the tomatoes and add to the mix.
Add the soup mix, vegetables and stock. Bring to the boil.



Add the extra cups of water and pasta and simmer for 30 mins.
