Ingredients 3 medium unpeeled potatoes, cubed
½ tbsp olive oil
1 tbsp parsley flakes
¾ tsp salt
½ tsp chilli powder
½ tsp paprika
¼ tsp dried thyme
Bit of garlic powder
A tiny bit of cayenne pepper
A bit dried rosemary - optional
Put the potatoes in a bowl and drizzle with the olive oil. Toss till coated.
Combine the remaining 8 ingredients in a small cup and sprinkle over the potato.
Mix until well coated.
Spread on a greased or lined baking tray with sides.
Bake on the centre shelf at 220°/200° if fan forced for about 45 minutes, stirring twice until they are tender and browned.
Serve with sour cream as an accompaniment though I had it as a meal.
