This sweet potato hummus is so, so, so good and very spicy. I was already obsessed with hummus, and sweet potato so it makes sense the put those two great loves together. And add a good kick of chilli of course.
Ingredients 3 small-medium sweet potatoes
1 can of chickpeas
3 garlic cloves (use Australian so much better!)
1 tsp salt
1 tsp cayenne
1/2 tsp chilli powder (depending on how hot you chilli powder is!)
1 tsp cummin
Put the sweet potatoes on to roast whole until they are soft all the way through. Allow to cool.
Pour in the drained and rinsed chickpeas, peeled garlic, the juice of one lemon and all the spices. Blend.
Once cooled peel the sweet potatoes and add to the blender.
Blend until smooth and serve with bread, biscuits, vegetable sticks, etc.
