A versatile tomato based salsa with a kick. The salsa can be used as a hot or cold accompaniment with fish, chicken, meat or in lieu of regular sauce in hamburgers. This Spicy Tomato Salsa was created to go with Avocado Fries.
Ingredients 2 Ripe Tomatoes
1 Tablespoon Rice Malt Syrup
˝ Teaspoon Dried Oregano
˝ Teaspoon Fresh Red Eye Chilli
Small handful fresh Coriander
Small handful fresh Basil
Salt and Black Pepper to taste
1 Teaspoon Extra Virgin Olive Oil
Juice of 1 Lime
Prepare the Spicy Tomato Salsa by dicing the tomatoes.
Heat the Extra Virgin Olive Oil in a saucepan and add the oregano, basil, coriander and chilli and sauté for 30-seconds.
Add the diced tomatoes and cook for 3-4 minutes, stirring continuously on high heat until the mixture starts to thicken into a salsa then add the rice malt syrup, lime juice and salt and pepper to taste.
Cook the salsa for another 3-4 minutes, remove from heat and pour the salsa into a small serving bowl.
Use the Salsa hot or cold as an accompanying sauce or salsa. Keep the bowl covered with cling wrap and it will keep for 3-4 days in the refrigerator.
