Spicy Veggie Pasta

Here's a fresh, summer inspired vegetable pasta that is a delight for your tastebuds. It's excellent as a main or as a side dish at your summer BBQ.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 6 servings

Ingredients
1 Large Brown Onion
2 Garlic cloves
Handful of chives
Half a large red capsicum
Handful of cherry tomatoes
One small broccoli
1tsp chilli powder
1tsp vegetable oil
500g of penne pasta

Method

Fill a saucepan with water and place on the stove to boil. Once boiling, add penne pasta and stir. Cook until penne al dente.

Cut broccoli into small florets and steam for 8minutes until cooked but still crunchy.

While broccoli is being steamed, place 1tsp of oil in a large saucepan and place on medium heat.

Dice onion, garlic and chives and place in the large saucepan. Stir for 2minutes.



Slice capsicum into small pieces, approx 1cm in size.

Add capsicum to large saucepan and cook for 2 minutes.



Slice cherry tomatoes into quarters.

Now you can add your cherry tomatoes and broccoli florets.



Add 1tsp of chilli powder.



Stir for 2minutes whilst on a medium heat.

Add penne pasta and mix thoroughly.



Your Spicy Veggie Pasta is now ready to serve!
