Spinach and Carrot Rice

I made this rice dish as I wanted to make something nutritious and fulfilling. It has just a few ingredients and is very easy and quick, but it was so comforting and my family loved it. So I know I will be making this more often.

Accompanied by pickle, pappadam and onion


Preparation Time: 5 minutes 30 minutes for soaking rice
Cooking Time:15-20 minutes
Makes: about 4 servings

Ingredients
1 cup long grain rice, soaked for 30 minutes
2 cups chopped spinach
2-3 medium sized carrots, grated
1 tablespoon fennel seeds
2 cloves
1 black and 1 green cardamom (I did not have these, but use if you do have)
Small stick cinnamon
1 bayleaf
2 black peppercorns
2 petals of star anise (optional)
1 tablespoon salt or to taste
1 tablespoon oil or ghee
1 small onion, sliced
1 teaspoon red chili powder (optional)
2 cups water


Method
Wash and soak rice for 30 minutes.

In a deep wok, put oil/ghee and add the whole spices to it. Fry for a minute and then add the sliced onions.

Saute onions till they are sightly brown. Then add the washed and chopped spinach. Let it cook for 2 minutes.

Now add the drained rice, salt, chilli powder and water. Cover and cook for few minutes till rice is half done.

Now add the grated carrot.



Again cover and cook. Check every 3 minutes till rice is done and all water is absorbed.

So nutritious


Serve hot with raita or pickle. Goes very well with pappadam.
