Spinach & Feta Turnover

With Autumn and Winter months fast approaching, what better way than to enjoy some freshly baked Spinach & Feta Turnovers? It is an easy to make, healthy recipe, perfect for all occasions and meals.



Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 16 servings

Ingredients
500g frozen spinach, thawed
2 eggs
200g feta, crumbled
4 sheets frozen puff pastry, thawed
3 tsp olive oil
Olive oil spray to grease.



Method
Preheat oven to 210C, line a large baking tray with foil and lightly grease with olive oil spray.

Heat olive oil in a frying pan and cook spinach over medium-high heat.



Remove from pan and set aside to cool. When cool squeeze out extra moisture and drain.

Combine together the spinach and feta.



Lightly whisk one egg in a bowl.



Add the egg into the spinach mixture and stir to combine.



Season with pepper.

Cut the puff pastry into quarters.



Divide the filling between the pastry squares.



Brush the edges with the remaining egg.



Fold the pastry in half diagonals to enclose the filling.



Use a fork to seal the edges.



Brush the turnovers with egg.



Bake for 20 minutes or until golden and puffed.



Serve warm.
