Spirulina Pesto Noodles

Get your kids to eat their leafy green vegetables with these tasty noodles! Bonus: there's some nutritious seaweed in this recipe too. If you haven't tried spirulina powder before, it is a subtle tasting powdered seaweed which is packed with protein and iron.



Spirulina Pesto Noodles


Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 3-4 servings

Ingredients
270g pasta noodles
1 spring onion
2 tbs fresh mint leaves
1/2 cup fresh flat leaf parsley
1 1/2 cups packed baby spinach
1 tbs spirulina powder
2 tbs extra virgin olive oil
1 tsp apple cider vinegar
2 tsp soy sauce

Method
Bring a medium sized pot half full of water to the boil. Add the noodles and cook according to package directions, or for about 10 minutes (until cooked through).


Spirulina Pesto Noodles

Meanwhile, make the spirulina pesto by combining the remaining ingredients in a high speed blender (or use a stick blender) and blending until a smooth pesto forms.


Spirulina Pesto Noodles

Mix the pesto over the cooked noodles and serve straight away.
