Steamed Pouting Fish Cabbage Rolls

Pouting fish is a milder cousin of cod fish, and a lot cheaper. Cooked in a similar way to the more familiar cod, it has a mild flavour and is extremely versatile.

Stuff cabbage leaves with pouting fish, cheese, and a bit of seasoning and you've got a gluten-free, healthy, fresh, and delicious lunch or dinner, for all the family.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 servings

2 Pouting fish fillets
2 Cabbage leaves
4 Tablespoons of grated grana padano
Half a teaspoon of white pepper
Knob of butter
Half a lemon

Required ingredients

Place the fish fillets with the pepper in a sieve on top of a saucepan of boiling water for 20 minutes.

After ten minutes add the cabbage leaves.

Remove the cabbage leaves from the saucepan add to a plate and top with the cheese.

Add half of the fillets and add the butter.

Squeeze over the lemon.

Roll up.

Repeat with the other leaf.

Garnish with the basil leaves for a delicate, herby flavour.
