Steamed String Hoppers Cake

The steamed string hoppers cake is a healthy breakfast looking similar to noodles. It is gluten free, dairy free, sugar-free, oil free. This requires very few ingredients also.

You can serve it with chickpea curry or green peas curry. You can even make it sweet by sprinkling some sugar and fresh grated coconut. My mother serves sweet and fresh homemade coconut milk with this noodle cake for breakfast and that tastes yummy.

Preparation Time: 25 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
1 cup rice flour
3/4 cup water
Salt to taste

Method
Dry fry the rice flour on medium-low flame for 10 minutes with continuous stirring. Then remove from heat and keep aside.

Boil the water and add salt to taste.

Add the boiled water immediately to the fried rice flour. Stir with a wooden spoon. The flour will get half cooked by this method. Cover and let it sit for a while.

When it is warm enough to handle, knead with your hands to make a soft dough.

Then fill the String hoppers maker with the dough. If you have a noodle maker, you can use that. Close with the presser.

Boil water in a steamer. Place the steamer colander. Then press and move the string hopper maker in a circle. Cover and let it steam-cook for 10 minutes.

You can also steamer mould if you want the cake in perfect shape.

Remove the steamer from heat. Transfer the string hoppers to a plate.

Serve with your favourite curry or sweet coconut milk. Enjoy.
